**RECIPE**
½ SMALL SEEDLESS WATERMELON, CUT INTO 1 INCH CUBES
4 CUPS FRESH ARUGULA
1 CUP CRUMBLED CACIQUE QUESO FRESCO
DRESSING:
¼ CUP EXTRA VIRGIN OLIVE OIL
2 TBSPS RED WINE VINEGAR
1 LARGE SHALLOT, MINCED
¼ TSP SALT
FRESHLY GROUND PEPEPR
¼ TSP CRUMBLED RED PEPPER FLAKES, + MORE FOR GARNISH
-HOW TO MAKE:
PLACE WATERMELON, ARUGULA, + QUESO FRESCO IN LARGE SERVING DISH AND LIGHTLY TOSS TOGETHER.
IN A SMALL BOWL WISK TOGETHER EVOO, VINEGAR, + SHALLOT. STIR IN A SPRINKLE OF SALT AND PEPPER AND CHILI FLAKES.
POUR DRESSING OVER SALAD AND LIGHTLY TOSS TO COAT WELL. SPRINKLE WITH MORE CHILI FLAKES IF DESIRED. ENJOY!

1 CAN CHICKPEAS
½ CUP TAHINI
2 TBSP LEMON JUICE, OR MORE TO TASTE
2 SMALL GARLIC CLOVES
1 ½ TSP KOSHER SALT
½ TSP SUMAC (OPTIONAL)
-HOW TO MAKE:
DRAIN 1 CAN OF CHICKPEAS AND RESERVE THE LIQUID (CALLED AQUAFABA!). RINCE CHICKPEAS AND POUR INTO BLENDER OR FOOD PROCESSOR. ADD GARLIC, TAHINI, LEMON JUICE, SALT, AND SUMAC (OPTIONAL). BLEND UNTIL HUMMUS BECOMES SMOOTH, LIGHT, CREAMY. TASTE AND ADJUST SALT AND LEMON JUICE TO TASTE. ENJOY!
