Cheese Sauce

¼ cup unsalted butter
¼ cup all-purpose flour
6 oz. any beer
½ cup milk
1 cup heavy cream
1 tsp. tabasco
1 tsp. dijon mustard
1 cup shredded cheddar

2 rib eye steaks
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. salt
½ cup olive oil


1 cup shaved iceberg lettuce
1 tomato, sliced thin
1 Vidalia onion, sliced thin
4 Italian heroes

Cheese Sauce

  1. Melt the butter and add the flour to make a roux.
  2. Add the beer and reduce for 4 minutes.
  3. Add the remaining ingredients except for the cheese.
  4. Bring to a simmer.
  5. Slowly stir in the cheese and set aside.


  1. Marinade the steaks with all ingredients for 2 hours or longer.
  2. Grill until medium rare and let it rest for 4 minutes.
  3. Slice paper-thin.


  1. Warm the bread on the grill.
  2. Open and fill with the sliced steak.
  3. Top with the cheese sauce.
  4. Garnish with the lettuce, tomato and onion.
  5. Eat and make sure to do the Philly stance when eating!
