Del Mar's reputation for fussiness and conformity will soon be tested with the arrival of Burlap, a second venture by former Top Chef contestant Brian Malarkey, who last year opened the Gaslamp trend spot, Searsucker. Burlap promises to exemplify Malarkey's penchant for convivial dining and playful recipes, which in this case will mingle American prairie foods with Asian ingredients. Think "eggs and pork belly and yuzu brown butter," "duck and eel" and "cowboy caviar." Burlap is slated to open in late July in the high-traffic Del Mar Highlands Town Center.
